School kitchens have a different rhythm from restaurants. Walk-ins and milk coolers run hard all school year and then sit through the breaks, and a failure in July can go unnoticed for weeks because nobody’s opening the door. For shops and restaurants it’s the normal lineup of reach-ins, prep tables, drink coolers and ice machines. A small shop with one drink cooler feels it fast when that cooler quits, so fogged doors or drinks that come out barely cool are worth a call early.
